If you are thinking about cooking something new with chicken, preparing something special for an upcoming celebration, or just a simple yet delicious meal to go with your favourite bakes (chocolate cookies perhaps?) for spending the weekends with the kids, then this Chicken Parmigiana with Mashed Potatoes recipe will definitely cover all grounds.
It is very easy to make and you can even do it with the kids. You can teach them valuable lessons about teamwork and creativity while spending time with them. You can give them a sense of accomplishment and most importantly have fun with them.
What is Chicken Parmigiana?
This recipe is a simple yet delicious delicacy that originated from Italy. It is also known as chicken parmesan. To simply put, it is a chicken topped with tomato sauce and cheese. Not only it is easy to do, the kids will definitely love this cheesy treat.
Chicken Parmesan is often partnered with pasta, most commonly, lasagna. It is also popularly used as a rich filling for pies or as an alternative to beef burger patties in sandwiches and burgers. For a change, we are going it partner it with mashed potato, another kid’s favorite, making it the ultimate weekend meal.
Ingredients for 4 servings
½ cup all-purpose flour
1 ½ cup breadcrumbs
4 chicken breast fillet
½ cup vegetable oil
1 cup marinara sauce
2 tomatoes (beefsteak tomatoes, sliced thick)
1 cup mozzarella cheese, grated
4 medium-sized potatoes, cut into cubes
½ cup half-and-half
Put the flour, eggs, and breadcrumbs in three separate bowls. Lightly coat the chicken in flour and shake off the excess. Dip it into the eggs and then to the breadcrumbs. Place the chicken in a lined baking pan with parchment paper in a single layer and cover with plastic wraps. Put in the fridge for 15 minutes.
Fry the chicken in a large skillet over medium-high heat for three to four minutes on each side or until golden brown and cooked through. Drain and put in a baking dish.
Preheat the broiler to high. Spoon marinara sauce over the chicken and then top it with tomato slices. Sprinkle it with cheese. Broil it for about two to three minutes or when the cheese is golden brown and bubbly.
- Mashed Potatoes
Put the potatoes with cold water in a saucepan. Boil it for about ten to twelve minutes or until the potatoes are soft. Drain the water and put the potatoes back in the pan and put the half cream in. Mash it until smooth and season with salt and pepper to taste.
Serve the chicken with the mashed potatoes on the side. Enjoy!
Now here’s another variation of the chicken parmesan. This time, we will not fry the chicken. Instead, we will wrap it with bacon and bake it directly. We will also have an upgrade of the sauce. Here is how it goes:
Ingredients for 4 servings
4 chicken breasts
8 strips of bacon
6 medium-sized potatoes, peeled
2/3 cup mozzarella cheese, shredded
2 cup of tomatoes, chopped
4 basil sprigs
4 small cloves of garlic
A pinch of sugar
1/2 cup of milk
1 cup of peanut oil for frying
- French Fries
Heat oil in a large skillet to 300 degrees F then it’s ready to fry.
Cut the potatoes into small sticks. Then soak them in cold water to prevent them turning brown. Drain off the water and dry the potatoes with paper towels.
In the first time frying, you will need 4 to 5 minutes to help the potatoes are cooked. Take them out of the oil and drain on new towels.
In the second time frying, turn the heat up to 400 degrees F and start frying those potatoes sticks again. When the potatoes are golden and crisp, remove them from the oil and drain on paper towels to take all the left oil.
Sprinkle a little salt on the dish.
Put a tablespoon or two of olive oil in a saucepan and put on medium heat. Put the tomatoes and minced garlic in. Add salt, pepper, and a bit of sugar if you want to make the taste more child-friendly.
Cook for around eight minutes, mashing chunks of tomato with the back of your spoon. Sprinkle with chopped basil leaves while stirring.
Preheat the oven for 200°C. You can start preparing your chicken while waiting for the potatoes fried.
Wrap two strips of bacon around the chicken breast. Spray it with olive oil before putting in a lined baking tray. Bake for 10 minutes and the pour the sauce in.
Remove the chicken from the oven and use a spoon to spread the sauce evenly on each chicken breast. Put the mozzarella cheese on top and season it with a little salt and pepper. Put it back in the oven for another 6 – 7 minutes to have golden melted cheese.
Now you have perfect bacon chicken with cheese on top served with crispy french fries. Enjoy! Your kids will love it.
