Rice crispy cakes….the sweet treat that stands the test of time being so quick and easy to make…with only three ingredients needed for a basic recipe, or four for a carroty version like this one.
These are a great healthier treat to whip up, and of course I sneaked in some shredded carrot to give them some extra healthy brownie points. The carrot also gives the treats a smudgier, melt in your mouth quality which has been a massive success and a much healthier addition than sugar laden marshmallows. Being so quick and easy to make, they are of course the perfect sweet treat to share with someone as part of the #TubForGrub campaign.
The idea behind the campaign – which is really rather lovely – is that you chow down on a scrumptious pot of The Collective’s scrummy yogurt, then once it’s empty…you fill it with some yummy grub – aka my carrot rice crispy treats – and then give it away to make someone’s day. So without further ado…here’s my carrot rice crispy treat recipe!
2 cups rice krispies
1/2 cup peanut butter
1/2 cup honey
1/4 cup finely shredded carrot
Line a baking tray with baking paper. Add your rice krispies into a large bowl.
In a pan, gently warm up the peanut butter and honey, mixing as you melt. Pour the mixture into the bowl with the rice kripsies and then add in the shredded carrot.
Pour the mixture into the tray and press down firmly with a wooden spoon to ensure it’s all equal then pop in the fridge for 30 minutes or more if you have time to solidify.
Cut up into squares and pop into your Tub4Grub and pass on to someone to make their day!
We passed onto our Tub4Grub to my mum who has been very unwell for months now, and it really did make her day!
