Super easy Mother’s Day baking ideas

Believe it or not, Mother’s Day is just around the corner and if you’re stuck for gift ideas, what better way to treat your mum than by baking her something extra special. If you’re not exactly the next Bake Off champion (aherm, which I am most certainly not!),  or don’t have time to spend all day perfecting a five tier cake (ditto!), then don’t worry! These super easy, super fast bakes are perfect for beginners, busy parents and even kids to try, and they can easily be done at the last minute. So make this Mother’s Day a little bit special and give your mum something not only home made, but home baked.

No Bake Needed

Some of the easiest baking recipes actually involve no baking at all – hurrah! Tiffins, as they are commonly known, are incredibly easy to make and allow you to change the recipe to include all your mum’s favourite sweet things. The basic ingredients are chocolate, butter and syrup, which you melt together until smooth and then add your other ingredients. You can choose crushed biscuits, any kind of chocolate bar, marshmallows, glace cherries and even nuts. Simply mix everything together, pour into a lined tin and leave in the fridge to set. Then cut into squares and you’ve got the perfect Mother’s Day treat for everyone to enjoy.

Banana Bread

One of the simplest and most foolproof recipes, banana bread is a favourite around this time of year and my absolute go-to. Even if you’re a truly terrible baker, it’s difficult to get this wrong. Banana bread is naturally moist and has an incredible caramelised sweetness, which makes it the perfect afternoon tea treat. Basic banana bread recipes consist of a simple cake recipe that uses brown sugar, as well as three or four very ripe bananas to add that signature moistness. To make it extra special, you can add chocolate chips, desiccated coconut or spices, and you can choose to add icing on top or simply leave it at a loaf. Banana bread is also easy to make into a vegan bake, which is perfect for ethically minded mums.

Cheesecake

Another no bake favourite, cheesecake is much easier and quicker to make than you might imagine. It can also be adapted to include almost any fruit or chocolate that your mum prefers! A simple cheesecake recipe generally includes a crushed biscuit and butter base, and a cream cheese filling mixed with double cream, icing sugar and any flavour you like. This could be vanilla, chocolate, fruit or even peanut butter. Once poured into the tin, top with fresh fruit or chocolate and leave to chill in the fridge. This no bake cake is so simple and will look really impressive when presented on Mother’s Day!

Apple Crumble

If you’re not confident with cake mix but still want to create a delicious dessert for all the family then fret not! apple crumble is definitely the way to go. Most families have their own tried and tested recipe, but if in doubt stick to this simple variation. First, stew the fruit – apples, rhubarb, blackberries – in a pan with two tablespoons of sugar and a little water. Once soft and hot, spoon into an ovenproof dish and sprinkle with a little cinnamon if you like. Then add the crumble topping, which is a simple combination of butter, flour and sugar, and you can also add some oats if you prefer a more varied texture. Sprinkle with sugar and bake in the oven until golden brown, then serve with custard or cream. Your mum certainly won’t forget this delicious, warming treat.

Mug Cakes

A popular dessert choice in recent years is the mug cake, a quick and easy choice for a crowd pleasing pudding. Each mug cake is made individually in the microwave and takes less than a minute to cook, so can be made literally at the last minute! There are many different mug cake recipes to try, but most stick to a basic cake mix of flour, sugar, butter or oil, baking powder and milk. They are perfect for vegans and can be customised with your favourite chocolate toppings or a scoop of ice cream. Perfect as an after dinner treat or to enjoy with you mum’s favourite film, these will make a very special Mother’s Day.

  1. Great ideas! I haven’t done any baking in ages but now I feel like I want to do some soon. I love tray bakes, they are so easy to make and pretty quick too. And I would never say no to cheesecake 🙂
